In their wisdom Microsoft have changed it so Outlook opens web links in Edge rather than the default browser. The first time it does this it asks, but if that is missed it can be changed in Outlook as per the following.
File > Options > Advanced > File and browser preferences and choose default browser from the dropdown menu.
